I’m Elaine.

A few years ago I found out that I had developed a number of food sensitivities. This was a real bummer because I love food!

I love to eat. I generally ate pretty healthily, but occasionally I also loved eating stuffing and mashed potatoes at Thanksgiving, and eating pork buns and snuffling up a cheese and potato piroshky (who am I kidding, I mean two of those piroshkis because you can’t eat just one) when I was at Pikes Place Market. I loved pasta, and clam chowder and lots of other delicious things.

When I found out that I had to cut out dairy, gluten, and refined sugar out of my diet, it seemed at first that I was never going to be able to eat the foods I enjoyed again. I thought that I was doomed to a life of eating terribly bland food.

But over the past few years, I’ve had a lot of fun figuring out how to make my favorite foods so that I could enjoy them without feeling physically ill afterwards. I had a hard time finding recipes for things that I wanted to eat. I wanted comfort food like clam chowder, or chocolate cake, and things like spring rolls and peanut sauce, and I couldn’t find recipes for any of those dishes that would work with the dietary restrictions that I had.

So I started writing my own recipes so that I could eat those wonderful foods again.

None of my recipes include dairy, gluten, and refined sugar. I know that many people are also finding that they are intolerant to some of those same ingredients, and it can be hard to find recipes that work and taste amazing with those dietary restrictions.

My hope is that the recipes on this blog bring you a lots of good food and the peace of mind in knowing that they won’t make you feel ill after you eat them. Because food should be something that you enjoy, not something that you have to stress over.

 

Etsy Shop

Hope and Butterflies is a place to find lots of wonderful gluten/refined sugar free and (mostly) dairy free recipes, and I’m working on getting my Etsy shop launched soon.

The reason why the site is called Hope and Butterflies is that I will be donating part of the proceeds from each sale in my Etsy shop to the Malala Fund for Girls Education.

There are so many girls in the world that don’t have access to a quality education, and I hope that I can do my part to change that.
